You find yourself stranded on a dessert island and you can only take ingredients for one dish what are you going to take? My answer: I am taking ingredients for Pizza. In my opinion it is possibly the perfect food. It can be everything to everyone. Lots of bread in the crust for the hard core carb cravers, tons of meat for the carnivores in the crowd, loads of veggies for the vegetarians and a whack of melty cheesy goodness that will satisfy just about anyone. In the winter you can cook pizza in the oven and load it up to keep you warm from the inside out, in the summer you can create a masterpiece on the barbeque and transform it with fresh veggies and shellfish. You can eat it cold for breakfast and even cook the crust and make a salad pizza by not cooking any of the toppings. What other recipe offers up the versatility of pizza? Then you might get that sudden pang of guilt – pizza isn’t exactly the healthiest food around. Correct but who cares, you are on a dessert island, there is plenty of time for exercise and restraint. In fact you won’t be getting dessert so have 2 slices.
Everyone has an opinion about how they like their pizza and my opinion changes all the time depending on my mood, the time of year and weather I am making it myself of ordering in. If I am making it myself I love a reasonably thin crust with a good homemade tomato sauce spread liberally but not sloppily on the base. A little bit of parmesan cheese to soak up some of the sauce. Fresh tomato slices, basil leaves and fresh whole milk mozzarella cheese torn from the ball and laid across the top. There is something so incredibly satisfying about pizza. Not sure what they would have with it but cheese seems weird somehow. Pizza is the ideal in between season food. Right now, we are waiting for those tender fresh greens of summer to emerge, the green beans, the peas and the fruit are all so close I can almost taste them but yes still so far away. Clean out your fridge and make a pizza, use up the sliced meat from the kids’ lunch, the ½ can of tomatoes from your pasta supper on Wednesday night and the cheese left over from last weekend. Thaw some of those wine ice cubes and pretend you are on a desert island. Spring, they say, is on its way.

Deer Season Entertaining – Easy Venison Recipes

If you live anywhere near a hunter or hunting area, then chances are you are going to get some deer meat. There are some great, easy recipes besides the old, tried and true-deer chili, deer stew, deer roast with vegetables, deer stroganoff, grilled venison tenderloins or chicken fried deer steaks with gravy and mashed potatoes.
Deer Jerky
You aren’t a true deer connoisseur unless you have tried to make your own deer jerky. You don’t have to have a dehydrator; you can use your oven, set on 200-250, with a hot pad stuck in the oven door to let the moist air out. It can take anywhere from 5-10 hours, depending on how chewy you want it. You can use the meat from the ribs, the flank steaks and the scrap meat that doesn’t end up ground in hamburger or sausage for this. Keep in mind that the meat you start with, ends up about a half or two thirds less after drying. Marinate ¼ inch strips and pieces overnight, in some liquid smoke, Tabasco sauce, Worcestershire sauce, soy sauce, a little seasoning salt, garlic powder and onion powder. Next day, spread meat on wire rack, foil underneath and put in oven until done, 5-10 hours.
An easy appetizer is Venison Cherry Spread
1 pkg. of softened cream cheese, ¼ to ½ cup of dried or fresh crushed cherries or pie filing and leftover cooked venison, roast or ground, (and a few red pepper flakes if desired for heat) and spread on crackers.
Venison Roll-ups are another easy appetizer
Simply slice steaks with the grain to make thin breakfast steaks. Roll around two or three asparagus or green onions, or one of each and secure with a moistened toothpick and throw on the grill until the meat turns brown.
Venison Roast Pizza is an easy leftover meal
Get a cooked, prepared pizza dough, or use a loaf of flatbread or French bread, split. Mix 1 pkg. of softened cream cheese with a tablespoon each of: horseradish sauce, ranch dressing, Italian dressing and spread on pizza dough or bread. Top with leftover venison roast or cooked ground venison, onions, pepper, olives or mushrooms, as desired, top with Italian blend or mozzarella cheese, bake at 350 until golden brown and cheese melts.
Crescent roll Venison Lasagna pie
Take 2 rolls of crescents and open on a pizza pan or (large round baking pan), spread with tips outward, like a sun shape. Mix together: ½ pound of venison, ½ pound sausage, tomato sauce, onions, peppers and green and black olives, and one pack of dry ranch dressing, prepared as instructions. Once mixed, place in the center of the “Sun”, top with shredded cheese, fold all the points towards the middle, and bake at 375 until golden and inside is bubbly.
Venison Cottage Cheese Pie
Mix 1 pound of ground venison, mushrooms and onions together and put in a 9″ frozen pie shell. In a separate bowl, beat 2 eggs and add 1 cup of cottage cheese and pour over the top of the meat mixture. Bake at 350 for 30-40 minutes until set, or top mixture turns golden brown.

Sausage Casserole
Mouth watering, fantastic! Onions and fresh shredded potatoes create a unique taste to this breakfast recipe. It yields 12 servings. This will be served in 1 hour and 45 minutes.
Ingredients:
1/2 cup shredded onion
3 cups drained and pressed shredded potatoes
6 extra-large eggs
One (1) Lb. flavored breakfast sausage
12 ounces shredded mild Cheddar cheese
1/4 cup melted butter
1 pound dairy cottage cheese
Directions:
Heat the oven up to 375oF (190oC). Lightly lubricate a 9 by 13 inch square baking pan.
Put the sausage in a big, deep fry pan. Cook it over a medium to high heat until it becomes equally brown. Drain, crush, and set aside.
Bake for about one hour in the oven. Wait until a clean toothpick inserted into the heart of the dish will come out. Let it cool for about five minutes before serving.
Scrambled Egg Breakfast Pizza
This is a scrumptious and easy to prepare pizza with egg. See the recipe below or you may add on some ingredients for experiment.
Ingredients:
Three (3) eggs
Cheese of your choice
¼ cup onions
One (1) package of ground sausage
Two (2) cans of biscuits
Procedure:
First, set aside onions and brown sausage. On a cooking dish, spin out biscuits.
Wrap unbaked biscuits with eggs, cheese, meat or onions.
Bake it in accordance with the biscuits instructions.
All Star Breakfast Rice
Ingredients:
2/3 cup milk
1/4 Teaspoon ground cinnamon
1 cup cooked rice
1 Tablespoon brown sugar
Fresh fruits like strawberries or bananas
Directions:
Combine rice, milk, brown sugar and cinnamon in a small pan. Cook over medium heat for about ten minutes until it becomes thick and creamy.
Then put it into serving bowl. Allow it to cool for about 3 minutes. Then you can top it with fresh berries or bananas.
Layered Vegetable Omelet
Ingredients:
1/2 cup chopped peeled carrot
1 clove garlic, minced
1 tbsp dry bread crumbs
1/3 cup chopped green onion
8 beaten and divided large eggs
1/2 cup cottage cheese
1 tbsp freshly grated Parmesan cheese
Directions:
Heat the oven up to 425°F (220°C).
Melt 1 teaspoon butter in a non-stick skillet over medium-high heat.
Add carrots, red bell pepper, broccoli, green onions and garlic.
Then cook them until tender. Remove vegetables from skillet to a mixing bowl; stir in cottage cheese. Then set aside.
Set aside the combined grated Parmesan cheese and dry bread crumbs in a cup or small bowl.
Melt 2 teaspoons butter in a skillet over medium heat. Add 4 eggs and cook, lifting the edges to allow uncooked portions to flow underneath.
Honey Pancakes
Ingredients:
1/2 cup honey
1 large egg
1 cup milk
1 tbsp vegetable oil
1 cup all-purpose flour
1 tsp baking soda
1/2 tsp vanilla extract
1/8 tsp salt
1 tbsp granulated sugar
1 tbsp white distilled vinegar
Directions:
Sour milk by adding vinegar; let stand for 5 minutes.
Combine oil, sugar and beaten egg in a bowl.
Add the soured milk, flour, baking soda, vanilla and salt. Mix it enough to blend. The batter will become lumpy.
On a preheated, lubricated griddle, cook over medium heat. Serve it with warmed honey.
