1 cup shredded low-fat cheddar cheese

2/3 cup cream of chicken soup, undiluted

1/3 cup chopped broccoli

1/2 cup chopped red bell pepper

1/4 cup water chestnuts, chopped

3/4-1 cup cooked cubed chicken

2 tbsp chopped onion

Preheat oven to 375 degrees.  Arrange crescent rolls on a 12-inch pizza pan, forming a ring with the pointed ends facing the outer edge of the pan.  The wide ends should overlap.  Combine the remaining ingredients and spoon over the wide ends of the rolls.  Fold points over filling and tuck under wide ends.  The filling will be visible.  Bake for 20-25 minutes until golden brown.

CHICKEN WITH OLIVES

1 red bell pepper

1 orange bell pepper

1yellow bell pepper

6 skinless, boneless chicken breast halves

2 tps olive oil, divided

2 tsp chopped fresh rosemary

2 garlic cloves, minced

3 tbsp chopped pitted kalamata olives

3 tbsp chopped pitted green olives

2 tsp fresh squeezed lemon juice

Preheat broiler.  Cut bell peppers in halves, lengthwise, remove seeds and membrames.  Place pepper halves, skin sides up, on a foil-lined baking sheet and flatten with hand.  Broil 10 minutes or until blackened.  Place in a zip-top bag and seal.  Let stand for 10 minutes.  Remove from bag, peel and chop.

Sprinkle chicken with salt and pepper.  Heat 1 teaspoon oil in a large nonstick skillet over medium-high heat.  Add chicken and cook 5 minutes on each side or until no longer pink in center.  Remove from pan; keep warm.

Add 1 teaspoon oil, rosemary, and garlic to pan; saute until garlic begins to brown.  Stir in bell peppers, olives, and lemon juice.  Cook 1 minute or until thoroughly heated, stirring constantly.

Yield:  6 servings of 1 piece of chicken and 1/3 cup of sauce

Top 5 Chicken Recipes

January 4, 2010 by admin

Chicken is probably the most versatile meat you can cook with. You can use chicken in everything from a curry or a casserole, to a cold sandwich. Chicken also has the added advantage of being one of the cheapest meats.

Here are some of the top five chicken recipes:

Chicken Curry

Chicken is the most popular meat to make a curry out of because it blends well with practically every spice. There are hundreds of different curries available to make, with Thai Green Curry being one of the favourite chicken recipes.

BBQ Chicken Wings

These are always a favourite during the summer; BBQ chicken wings are easy to prepare and even easier to cook. All you need to do is to cook some chicken wings over the barbeque or under the grill after marinating them in barbeque sauce. You can make your own sauce, or simply buy one ready made.

Chicken Fried Rice

One of the most popular forms of chicken recipes, though few people actually cook it themselves. It’s a very easy recipe to cook and just requires boiled rice to be added to a saucepan with the small chicken pieces.

Chicken Noodle Soup

Chicken noodle soup is one of the healthiest chicken recipes you can make, and one of the quickest. Simply cooking the noodles and stirring in the chicken can give you a delicious soup in around 10 minutes.

Chicken Pizza

Chicken isn’t the most popular topping for pizza, but if you like to make your own pizzas at home then you should give chicken a try for a delicious topping

How to Make Healthier Chicken Wings

December 25, 2009 by admin

I was born and raised in Buffalo, N.Y., so I have had my fair share of chicken wings.  I think this recipe is great for everyone, because they are baked and not deep fried.  Which I like because deep frying can be a little dangerous in the kitchen.

Naturally the #1 food at most parties is chicken wings, followed closely by pizza. I know their are 100’s of ways to make chicken wings and I’m sure most are very good. The recipe I want to share with everyone is great tasting, but almost as important as the great taste of these wings is the simplicity of making them. Also they maybe a little bit healthier, because they are baked in the oven.

The first thing to do is go to your local dollar store and buy a couple disposable baking pans, get any size you want. I would suggest the large ones that you can make lasagna in, I find they work the best.

This is the basic recipe for 2 1/2 lbs. chicken wings medium heat.

Preheat oven 425 f
2 1/2 lbs. chicken wings cut in 2 so you have a wing part and a little drumstick looking part, just spread the wing apart and cut into 2 pieces.

Spread the wings out in your disposable pan and bake for 1 hr.

For the sauce:

1/3 cup margarine try a healthy one like smart balance
1/2 cup hot sauce in Buffalo we use Frank’s Red Hot Sauce, which has this recipe on the bottle.

Melt your margarine then add your hot sauce, when the wings are done cooking, remove them from the oven. Then add your hot sauce into the pan with the wings and stir or shake gently the wings in the sauce.

A great way to serve them is in a crockpot on low or warm setting this way they will stay nice and warm for your party.

Just a regular blue cheese dressing is fine, a good one is use bottle ranch dressing and add your own fresh blue cheese. Celery and carrot sticks and your ready to party. The best part is no pans to clean. Trust me I tried this way with my own pans lined with foil and it still was a mess.

I hope you enjoy these wings at your next get together.

I am a hockey fan from Buffalo, N.Y. and over the years have tried many chicken wing recipes and this one is my favorite. You can make them ahead of time and then put them in a crockpot for the party, and they also travel easily.

The Ultimate BBQ Chicken Pizza

December 5, 2009 by admin

Chicken:
1 lb. boneless, skinless chicken breast
1/4 C. Olive oil
2 cloves garlic, minced
1 t. salt
1/2 t. fresh ground pepper

Carmelized Onion:
3 large vidalia onions, sliced thinly
1/2 stick butter

BBQ Sauce:
1/2C. ketchup
1/4 C.molasses
1/4 C. soy sauce
1 t. ground ginger
1 t. granulated garlic powder
1 t. granulated onion powder
1 t. chipotle pepper powder
3/4 cup packed light brown sugar
2 t. liquid smoke, hickory seasoning

8 oz. goat cheese, crumbled

1 recipe pizza dough prepared and risen or 1 fresh, store bought pizza dough. 2T. olive oil

Chicken:
In a gallon zip style plastic bag, marinate chicken breasts in oil, garlic, salt and pepper. Let stand for 20 minutes. Grill about 5 minutes on each side or until chicken is no longer pink inside. Remove and cut into bite sized pieces. Set aside.

Carmelized Onion:
Melt butter in a large nonstick skillet over medium low heat. Cook onions in butter until very soft and deep golden brown(carmelized). Turn down heat if onions brown too much, they should stay more golden than brown. Set aside.

BBQ Sauce:
Mix all ingredients in a medium sized bowl.

Dough: spread olive oil on large smooth work surface. Stretch and shape dough to a very large oval(+/- 12×18inches). turn over on work surface to coat both sides with olive oil.

With grill preheated on medium, fold pizza dough in half the long way then in half again the short way.(This helps to carry it to the grill). Carefully and quicklylay down the dough and unfold it onto the grill surface. Close the lid for 2-3 minutes.

Open the lid and prick any bubbles on the dough’s surface with a fork. With tongs, flip dough over. Cook until lightly browned. Remove from grill. Turn grill down to low.

Pizza:
Spread cooked dough with BBQ sauce. Dollop on spoonsful of the carmelized onions, gently spreading them out as evenly as possible. Sprinkle with grilled chicken pieces then goat cheese.

Return pizza to grill and close lid for about 4-5 minutes until goat cheese is soft and the pizza is warm throughout. Slice with pizza cutter.

Quick and Easy Chicken Salad Recipes

October 16, 2009 by admin

As a kid, I loved tuna salad. Because I was so picky, it was one of few foods that I ate. My mom used to go so far as to pack me a tuna sandwich when she and my brother went out for pizza (as that was not one of my accepted foods at the time).  As I got older, I started to experiment with different foods, and one day while at a friend’s house, I tried chicken salad for the first time. Up until that point, I had never thought of creating a mayo-based sandwich filling with cut up chicken, one of my favorite foods.

My friend cooked a few chicken breasts (which I marveled at since I was young and had no experience cooking my own meat) and then the two of us mixed in some mayo, chopped celery, raisins, salt and pepper. I was blown away by how delicious it was. Every time I hung out with that friend after school, I would request that we make chicken salad, and I even asked my mom to show me how to cook my own chicken so I could make it at home and pack chicken salad sandwiches for lunch.

To this day, I enjoy creating chicken salad variations with nuts, dried fruit and fresh herbs. My favorite is still the classic mayo, celery, salt, pepper and raisins combination, but I’m always looking for new variations. I found a great selection of recipes on RecipeLion.com; they have everything from classic chicken salad and fruit-filled chicken salad to baked chicken salad recipes and even a low-fat version. I loved the unique idea of adding artichokes and sundried tomatoes, two items that I love but never would have thought to include in my chicken salad.

One thing I’ve found is that many people are turned off of chicken salad because of an often overwhelming amount of mayonnaise. Believe it or not, there are many ways to make a delicious chicken salad sandwich without mayo. You can replace mayo with your favorite salad dressing – vinaigrettes work well – and add the rest of the ingredients in the same way. This is a great variation of classic chicken salad and it will save you quite a few calories.  If you’re not completely opposed to mayo, use a dollop to add moisture and then add your favorite veggies, nuts or mix-ins.

No matter what type of chicken salad you prefer, you can mix up a batch in no time. If you don’t want to cook chicken on the spot, use leftovers from a previous meal. Just remove the skin and dice up the meat. You can also snag a rotisserie chicken from the grocery store (almost all grocery stores have them in the hot foods section), cut it up and have meals for days. Use the white meat to make chicken salad and use the rest of the bird for other quick and easy meals like tacos, chicken pizza or sandwiches. It’s a fast and simple way to get a meal on the table in no time, and the juicy chicken will create a fabulous chicken salad that everyone will enjoy.

Try out a new chicken salad recipe this weekend. Play around with different ways to dress the salad, add crunch and flavor. You might be surprised with what you come up with.
