Chocolate and Banana Pizza – Perfect for Easy Kids Parties

In my neck of the woods over the last few years the ‘Chocolate Restaurant’ concept has grown in popularity, there is usually one in every shopping mall where you will see people both young and old sipping and dipping from little pots of melted chocolate or smiling and making that heavenly expression of rapture as they savour the sweet gooeyness of a chocolate pizza! Whoa, rewind there…chocolate pizza? Yes chocolate pizza. And what goes better with chocolate than banana?

 

Chocolate and Banana Pizza

 

Makes 4*

 

Let’s start with the base.

 

As kids parties or any party for that matter are my thing I like to keep it as simple but of course delicious as possible. You could make your own base, but if time is of the essence which it usually is for me I recommend a sheet of frozen puff pastry.

 

For the topping:

 

200g (7oz) block of dark chocolate (Choc chips are not recommended as they contain vegetable oil which is not great when melting, hence they retain their shape when used in cookies or muffins)
60g (2.12oz) unsalted butter
100mls (3.5 fl.oz) of thickened cream
4 bananas, just ripe
Lemon Juice
Handful of mini marshmallows
Vanilla ice-cream (optional)

 

Method

 

Defrost and cut sheet of pastry into 4 squares
Place chopped chocolate, cream and butter over a double boiler (boiling water in pan with bowl for chocolate sitting above) stirring gently and continuously to keep from overheating. What you are creating here is simply a ganache.
Spread chocolate over the pastry bases**
Peel and slice bananas and toss in lemon juice then arrange over pizza
Lastly sprinkle with mini marshmallows
Place on a tray (spray with oil if you don’t have silicone tray) and pop in oven at 180°C for around 5 minutes or until pastry edges puff and are a golden colour.

 

To Serve

 

You can make these ahead of time and serve cold, but for a truly delicious experience serve hot with a scoop of ice-cream plonked on top, and for an even more delicious experience, if that’s possible, roll the scoop of ice-cream in icing sugar first.

 

*It is possible to spread this topping further to 6 or even 8 pizzas, but I’ll leave that up to you to decide.

 

**If you like you can make the chocolate topping ahead of time and place in oven to set then when you are ready to construct the pizza chop the chocolate into squares and sprinkle over the pizza. They will melt into lovely globs of sweetness.

Pizza crust – no yeast

2-3 servings

This is what you need:

1.7 cups wheat flour
1.5 tsp baking powder
0.5 tsp salt
1.7 oz butter
0.6 cups milk (water works too)

Instructions:

Combine flour, baking powder and salt in a baking bowl. Add butter and crush any lumps with your fingers so that the dry ingredients and the butter become one. Add the milk and make a dough. Knead the dough for a bit until it’s smooth. Roll the dough with a rolling pin, creating one big pizza or several small ones. A really fast way to do this is to roll the dough directly on the baking tin. If you soak your hands and the rolling pin in cold water the dough won’t get sticky as easily. For me this has worked better than adding flour, like some recipes suggest.
Bake for 12-15 minutes in 482°F.

Tip for filling:
Tomato sauce:

Ingredients:
½ onion
14 oz chopped tomatoes
1 tbsp tomato purée
Salt
Black pepper
Garlic powder
Sugar
oregano
Basil
Tarragon

Combine chopped onion, a can of chopped tomatoes to the pan, salt, pepper, garlic powder, a pinch of sugar and tomato purée in a bowl. Add equal parts of oregano, basil and tarragon and stir. The tomato sauce will be ready in the oven. You don’t need to cook it separately.

Other things to put on the pizza:

Fillet of beef
Fresh tomatoes
Onion
Olives
Feta cheese
Bearnaise sauce (garnish after taking the pizza out of the oven)

When the pizza is ready, garnish with a few fresh leaves of basil.

How to Grill Pizza

So you’re having a Barbeque and are not quite sure what you want to make? A favorite of mine and your best bet to impress grilling a crispy gooey wonderful pizza. Grilling pizza is a fairly simple process involving just 4 steps.

For simplicity, I will assume that you already have made the dough. If not, check out this list of pizza dough recipes. I will also assume that you have rolled out the dough into your favorite pizza shape.

Step 1: Fire up the Grill

You want to have a medium grill heat, you should be able to hold your hand over the grill (notice I said over, not on) for about 3-5 seconds before having to pull away. You also want to make sure the coals are evenly spread out. That way you can ensure even cooking and color to your pizza.

Step 2: Grill your toppings

Since you have your grill all ready, why not grill your toppings. Grilled vegetables, chicken, steak, or shrimp make wonderful toppings for a grilled pizza.

Step 3: Grilling the Dough

Prior to putting dough on the grill, you should place it on aluminum foil and place it in the refrigerator for about 5 minutes. This will make it easier to work with and will allow you an easy way to transfer your dough to the grill. To put your dough on the grill, simply place it, dough side down and then remove the foil.

Grill the dough for about 3-5 minutes or until it begins to brown. At this point you will want to flip the dough and begin topping it. I sometimes pull the dough off the grill while I top it so that I don’t burn it.

Step 4: Topping the Dough

Place all of your loose toppings first and cheese last. The cheese will act as a sealant; holding the toppings together. Check out our pizza recipe page for ideas on toppings.

Once your cheese is melted, the pizza is done. Remove it from the grill, let it sit for a few minutes and then slice it up. You are now ready to enjoy your grilled pizza.

How To Make An Easy Diet Pizza Dough

An inexpensive and simple food, Pizza is definitely the reason why Pizza parlours make so much money selling these slices of heaven. Although, Pizza is a meal you can create at home, and you do not have to buy and keep Pizza bases for when you get that craving.

If you surf the world wide web it’s easy to locate recipes and methods for creating all types of Pizza dough. Examples are; half wheat pizza dough, thin pizza dough, herby pizza dough, and the popular crispy pizza dough. Think of a dough crust, and someone probably makes it. Unfortunately most of those Pizza Dough Recipes need you to spend anywhere up to twenty-four hours to prepare. In my mind Pizza is only a convenience food if its fresh and quick, and in this case an easy diet Pizza recipe. Forward planning shouldn’t be a part of the experience. Kneading for ages and waiting patiently for it to ferment, no thanks! Thankfully I have a better way and best of all its an easy diet method.

When I get the craving for a Pizza, I can’t wait, but it’s got to be fresh, quick, low fat, low cal and high in stomach filling fibre! However, if dough mixture needs time to rise, how can it be made quickly? Well guess what, my recipe is speedy and simple to create in your very own kitchen, and you only need a few ingredients: olive oil, whole wheat flour, water, yeast, salt, and my secret ingredient (read on).

A technique in creating an easy Pizza dough fast, is using rapidly rising yeast. Using this special yeast has the ability to cut your pizza dough prep’ time from up to twenty-four hours to only thirty minutes. In that thirty minutes, you have the time to cut up and select all the toppings you would like on the Pizza, failing that just relax for 30 minutes, “chuckle“.

Step-by-Step Recipe:

1. You need one cup of hot tap water (not boiling). Get a large mixing bowl, pour the hot water in, and then add a teaspoon of salt and a packet of the rapid rising yeast. Mix it all together with a fork.

2. Slowly mix in 2 cups of whole wheat flour, and 1 tablespoon of my secret ingredient – powdered psyllium husk. The husk is tasteless and high in fibre. In the beginning, the mixture will combine quickly. Then the mixture will get too thick to use the fork, that’s when you start using your hands. It can get a little fiddly. If it gets a bit gooey, keep a little extra spare flour on the side.

3. When your kneading the dough it might stick to your hands, to prevent this dust the hands with the spare flour, then resume kneading the dough. Keep repeating the process until it forms a ball and it doesn’t stick. In an ideal world, you need to use as little extra flour as achievable to make this occur.

4. Now cover the outside of the dough ball with a tablespoon of olive oil, it just makes it a bit easier to handle. Get a clean kitchen towel and cover the dough ball, then leave for half an hour.

5. After 30 minutes roll out the dough ball with a rolling pin, roll it out on big baking sheet, or something equivalent like a pizza stone. When finally making this Pizza base it’s better to have the thin and crispy style, to achieve this make sure you roll it out as thin as practically possible. But don’t make it so thin if splits apart.

What make this an easy diet Pizza is the speed, high fibre, and comparatively lower calories. The combination of Psyllium husk and whole wheat flour adds lots of indigestible fibre making it filling and nutritious.

Not everyone holds the same taste in pizza. I personally have a few types of pizza that I cannot stand. Some pizza is totally horrible for me, like Sbarro Pizza; an insult to the senses. I simply do not like Sbarro Pizza; greasy, cheap, and expensive. The thought of spending money for it simply upsets me. Sbarro Pizza is always in malls but, thankfully, there are some of those other wonderful restaurants in every mall food court. I just wish there were more pizza restaurants to choose from at the mall food courts. It often appears as if Sbarro Pizza has a monopoly on the mall food court pizza business.

You may love Sbarro pizza; although I am not sure how this could happen. Either way, it just goes to show you how different people have a different idea of what good pizza should be. Perfecting your own pizza is something that takes time and experience. Sure, you can start with Dominos pizza, and then, as you become skillful; adapt it to suit your taste.
