Orange Chicken with Rosemary: Ingredients: 1 lb boneless and skinless chicken portions, 1 tsp paprika, 1 tsp pepper, 6 oz thawed juice concentrate, 1 tsp rosemary, 1 tsp thyme, and 1 tsp marjoram. Place the chicken in a casserole dish. Lightly add pepper and paprika over the chicken. Mix the other ingredients in a bowl and pour over the chicken. Bake the chicken covered at 350F for approximately an hour.

Tasty Tacos: Ingredients: 1 pound lean ground beef, 1 ounce taco seasoning packet, 2/3 cup water, one can of kidney beans, 1/3 cup light sour cream, 1/3 cup medium salsa, 4 cups shredded iceberg lettuce, 2 cups chopped tomatoes, 1 cup grated cheddar cheese, and flour tortillas. In a frying pan, cook the lean ground beef until crumbly. Drain the fat. Add taco seasoning packet, 2/3-cup water, and beans to the meat. Mix everything together and cook. Reduce heat and let simmer for about 5 minutes. Stir as it simmers. Remove from heat and let it cool while covered. Divide all of the lettuce, tomatoes, cheese, salsa, and sour cream in separate small bowls. Set aside and let it cool a bit. Add sour cream and salsa to a small bowl and mix until well blended. Warm the tortillas shells in the oven or microwave. Place the meat filling in the tortilla shell. Allow each member of the family to add their choice of vegetable toppings.

Hamburger Pizza Pie: Ingredients: 1 pound of lean ground beef, 2 packets of pizza dough mix, 1 can spicy pizza sauce, 1 pound of mozzarella cheese. Brown the ground beef in a frying pan until crumbly. Drain the fat. Follow the directions of the dough packet mixture to make the crust. Grease the bottom and sides of a pizza pan. Press the pizza dough into the pan, including the sides to make a thicker crust. Sprinkle flour on your hands to keep the dough from sticking to fingers and hands when you press it for the crust. Add a layer of the spicy pizza sauce over the crust. Add ½ of the ground beef to the bottom of the pan. Cover the top with grated parmesan cheese. Repeat the process to have another layer. Sprinkle the top of the pizza with mozzarella cheese. Bake at 350-degrees for approximately 20 minutes and the crust is brown. Remove from the oven and let it sit for a few minutes before cutting and serving.

Do you have a family “on the go”?  Don’t fall into the fast food drive-thru window trap.  That’s okay from time to time but it is too expensive and unhealthy to become a regular part of your family’s diet.  Try these quick and easy recipes for an easy and quick meal at home.  Mom’s Microwave Pizza Chicken can be made even easier by replacing the fryer with 8 boneless, skinless chicken breast halves.  You eliminate cutting up the pieces and removing the skin.  The chicken will also cook in about half the time.  Chicken is done when the juices run clear.   The Beefy Skillet Ravioli uses refrigerated pasta and only needs 15 minutes to cook.  Serve with a salad and you have a meal.

MOM’S MICROWAVE PIZZA CHICKEN

1 fryer, cut-up into 8 pieces
1 can (10-oz) condensed tomato soup
1 can (6-oz) tomato paste
1/4 tsp onion salt
1/4 tsp garlic salt
1/4 tsp oregano
1/4 tsp basil
1 can (4-oz) mushroom pieces, drained
8-oz shredded Mozzarella cheese
1/4 cup Parmesan cheese

Remove skin from chicken pieces and arrange pieces in a lightly greased 12 x 8-inch microwave-safe dish. Stir together the tomato soup, tomato paste, onion salt, garlic salt, oregano, basil, and the mushroom pieces. Generously spoon the sauce over the chicken pieces. Place dish in microwave and cook for 19 to 20 minutes. If you are not using a microwave turntable, turn chicken 1/2 turn after 10 minutes. Sprinkle cheeses over the chicken and continue to cook for 2 to 4 minutes, until cheese is melted and chicken is done.

BEEFY SKILLET RAVIOLI

Prep 15 min Cook 15 min

1 lb lean ground beef
1 can (26 oz) Garlic & Herb Spaghetti Sauce
1 can (14.5 oz) Diced Tomatoes with Sweet Onion
9 oz pkg refrigerated cheese-filled ravioli
2 tbsps shredded Parmesan cheese
1 tbsp chopped fresh Italian parsley

Brown ground beef in a large skillet, drain. Stir in the spaghetti sauce and tomatoes; blend well. Bring mixture to a boil. Add the ravioli to the skillet and spoon the meat and sauce over the ravioli until it is well coated. Reduce the heat, cover and simmer over medium heat for 15 minutes or until the ravioli is tender. Sprinkle with the cheese and the parsley.

Dare to be Different: Grilled Panini Recipes

Contrary to what many people seem to think, panini are not only suited for main courses alone, and/or for lunch or dinner only, for that matter – they’re far more versatile than that. Grilled panini recipes can be served during breakfast, too, and may as a matter of fact can make for some lovely breakfasts. Moreover, if you’re feeling creative, you can even make sweet panini that can serve as dessert!

Here are some examples of some nicely creative “segment-busting” panini.

This is one of our favorite panini recipes, and we have to admit it’s partly because it does away with so many people’s preconceived notions of what panini can and can’t be. Here’s a sweet panini that can be served for breakfast or as a sweet ending to a meal. Preheat your grill to medium heat. Prepare two slices of French bread by making sure they are no more than an inch thick (you may also decide to trim the crusts if you wish). Get a sweet cream cheese of your choice; you may decide to use a sweet dessert cheese instead, such as mascarpone. Around 4 or 5 tablespoons should be enough. Mix this cheese with an equal amount of a sweet fruit preserve, like a marmalade or a jam. Spread the cheese in one of the slices of bread, and top with the other slice. Spread a little butter all around the outside of both slices of bread. Place in your hot grille, pressing down. Grill only until the bread is nicely browned. If you wish, you can add a little confectioners’ sugar to accentuate the taste.

Here’s another “dare to be different” sort of panini, one that’s styled after another Italian favorite – pizza! Heat your grille to medium heat, and spray it with a nonstick cooking spray. Select and heat some of your favorite pizza sauce. Any sort of pizza sauce will do, from a tomato-based one to a cream-based one, to even a simple olive-oil based sauce. While you’re waiting for the sauce to heat, grate some mozzarella cheese. When the sauce is hot, select bread – any sort will do, but we recommend Italian bread – half it, and then spoon the sauce gently into the bread. Don’t put too much or it will overflow. Then heap your grated cheese gently onto the sauce, and finish up by closing each panini with the spare bread slices. Grill these panini until the cheese melts and the bread is golden-brown.

The bottom line is that one’s imagination is the only limitation regarding panini. So give your imagination free reign and whip up something inventive today! You never know – it could be the culinary creation of the decade… at least in your own house, or among your own friends…

Smoothies: Why stick to solids? You can whip up a very tasty smoothie with a little milk or yogurt, a couple of bananas and any other fruit you might like. Some people take this a step further and make healthy green smoothies by adding spinach which doesn’t flavor the smoothie but adds vitamins and fiber.

There are so many ways to make breakfast for your family without having to get up hours in advance. You’ll all feel a lot better if you have a nice meal in your stomachs as you head off to school and work, too!

Hamburgers

The name “hamburger” originated in Hamburg in Germany. These guys used to put a piece of roast pork into a roll, and serve it warm. This tradition was imported into America by German immigrants, and over time adapted until it became a very typical American dish. According to legend the first person in America to make hamburgers was a certain Charlie Nagreen of Seymour, Wisconsin. He flattened a meatball and placed it between two slices of bread, and the hamburger was born! There are various others claims to the title of “originator of the hamburger” though.

BBQ Baby Back Ribs

This started off during the latter part of the 1800s during cattle drives in the American West. The so-called “cowboys” were given very cheap cuts of meat, often so tough or stringy that it had to be cooked for hours before becoming soft enough to eat.

They started to cook this outside, over an open fire. The taste of the smoking wood gave it a very special taste, and once again a dish was born that become part of American culture. The addition of marinade or a basting sauce has further enhanced the taste and softness of ribs, and nowadays it is really something to die for!

Buffalo Chicken Wings

This is one dish for which we can claim with certainty that it originated in the United States. The then proprietors of the Anchor Bar (in Buffalo, New York) claim to be the first to prepare this dish way back in 1964.

What happened apparently is that the owner’s son and his friends arrived home unexpectedly late one night, and she couldn’t think of anything else but to deep-fry some chicken wings and afterwards dip them in a very hot sauce.

This proved to be so popular they they started serving them to customers. The end result is well known. Today we even have chain restaurants specializing in buffalo wings, and of course the National Buffalo Wing festival!

Chili “Con Carne” (Chili with meat)

There are of course also many places claiming to be the home of this mouth-watering dish. One of them is Baja California in Mexico. But the most widely accepted home of Chili Con Carne is San Antonio in Texas.

Texas style chili (the original version at least) contains no other vegetables – only chili. The meat always has to be beef, venison or other mature meats. Prime beef and veal will not work – it tends to simply fall apart.

Other variations on the basic recipe include the following: Pedernales river chili, Cincinnati style chili, New Orleans style chili, Vegetarian style chili, and chili hot dogs.

Pizza

Nobody will claim that Pizza originated in America. That was the privilege of Italy, or as some would have it even China. But America certainly perfected the Pizza.

There are too many varieties of pizza to discuss all of them in detail in this article. New York Style pizza is most likely the most traditional type. It is created in a pizza oven, and usually has a relatively thin crust. Chicago style pizza, or pan-fried-pizza has a thicker crust, and is cooked in a deep-fry pan. St Louis style pizza uses St Louisan Provel cheese instead of mozzarella.

American gourmet food recipes are in a class of their own. Some might call it junk food – others call it food made in heaven.
